We experimented with almost a dozen filling variations before finalizing this raspberry ganache. Crafted with white chocolate, heavy cream, and freeze-dried raspberries, this filling is tart yet sweet, smooth, and creamy, with an eye-catching color. No artificial coloring required!
Where to Buy Freeze-Dried Raspberries?
You can find freeze-dried raspberries at Target, Trader Joe’s, Whole Foods, Kroger, and also online here.
Can I Use Fresh Raspberries?
Sadly, fresh raspberries do not work well for this recipe. They create a grayish-purple hue when mixed with white chocolate, make the ganache too runny to maintain its form, and lead to an overly sweet taste.
If you prefer using fresh raspberries, I suggest my Buttercream Frosting recipe. Incorporate some raspberry puree, but make sure to strain it through a sieve to eliminate the seeds. Be cautious not to use too much raspberry puree, as it could lead to runny frosting.
Can I Use Another Fruit for the Filling?
We haven't tried that, but feel free to experiment with other freeze-dried fruits, like strawberries. Just keep in mind that different fruits will vary in sweetness, which will affect the overall sweetness of your cookie sandwiches.
It’s important to note that dried fruit differs from freeze-dried fruit. Freeze-dried raspberries contain no extra moisture and deliver a concentrated flavor, so only freeze-dried fruit should be used in this ganache.
Should I Roll the Cookies in Sugar?
I strongly recommend rolling your cookies in sugar before baking. Skipping this step will affect their wonderful texture and they won't caramelize as well, resulting in a loss of flavor. Additionally, rolling the cookies in sugar adds a lovely sparkle and helps create those beautiful crinkles as they bake and cool.
Can I Use a Hand Mixer for This Recipe?
Yes, a hand mixer is perfectly suitable for this recipe.
Can I Make These Cookies Larger?
We recommend using a small 1-tablespoon scoop for these sandwich cookies to create perfectly bite-sized treats that are easy to enjoy. However, you can certainly make them larger if desired! Just keep in mind that larger cookies will require a longer baking time. Additionally, larger cookies will have a higher filling-to-cookie ratio, so you may need to adjust the amount of ganache accordingly.
Can I Halve or Double This Raspberry Cookie Recipe?
Absolutely! You can easily modify the recipe for more or fewer cookies. If doubling, just double all ingredients to produce about 30 cookie sandwiches—no other changes necessary.
If halving the recipe to yield approximately eight cookie sandwiches, cut all ingredients in half. Note that you’ll require half an egg—crack one into a small bowl, whisk it well, and measure out two tablespoons.
