How to Make Brownie Cookies:
These soft and fudgy homemade brownie cookies are specifically crafted for ice cream sandwiches. They bake and flatten out, making them perfect for holding a generous amount of ice cream that’s easy to enjoy.
The dough will resemble wet brownie batter. After chilling for an hour in the fridge, it will take on a mousse-like texture, making it easier to scoop. If it remains too wet to scoop, return it to the fridge until it firms up.
My Best Tip: Be Mindful of Timing!
The cookie dough should chill for an hour ,and the baked cookies also need to freeze for an hour before being assembled into sandwiches. I highly recommend freezing the completed sandwiches for at least an hour prior to serving. The flavors meld best if frozen for 8 hours before enjoying.
Fortunately, you can break the steps up! The brownie cookies can be made and frozen in an airtight container for up to a month. You can also assemble and keep the sandwiches for at least a week, if they last that long! This makes it easy to space out the steps if you’re pressed for time in one day.
How to Assemble Ice Cream Sandwiches
For optimal results, assemble the sandwiches ahead of time. This helps ensure they’re solid enough to hold together without becoming a soupy mess before you’ve even taken your second bite.
Freeze the cookies solid beforehand. If not, they’ll crumble, and your ice cream will melt while you assemble if this step is skipped.
Use fully frozen ice cream. Avoid assembling sandwiches with ice cream that’s just been churned, as it will create a soupy mixture. Homemade ice cream should be in the freezer for several hours after churning to become firm enough for sandwiches.
If your ice cream is overly hard and tough to scoop, place the container in the fridge for 30 minutes prior to assembly.
This step is optional, but to create neat and attractive sandwiches, I like to lay a large sheet of plastic wrap on my work surface. Scoop some ice cream onto one side of the plastic. Pull the other side of the wrap over to cover, then use the bottom of a measuring cup or glass to press down on the scoop until it becomes a perfectly flat disk that matches the diameter of the cookie. Then unwrap and sandwich it between your cookies!
Is homemade cookie butter ice cream necessary?
Not at all! While I love my homemade cookie butter ice cream, store-bought is absolutely fine. Trader Joe’s has a great variety, but I also enjoy McConnell’s.
How to Store Ice Cream Sandwiches?
You can keep them in the freezer for a few hours on a tray before serving without needing to wrap or place them in a container. For storage over a few days, transfer the solid sandwiches into an airtight bag or container.
If you need to store them longer, individually wrap each sandwich in plastic wrap and place them in an airtight container to prevent freezer burn.
How to Serve Ice Cream Sandwiches:
If your sandwiches have become too hard, let them sit in the fridge for 15 to 20 minutes before serving. This will soften them evenly without making the cookies
