Established in the 1800s to accommodate the local water mill workers, this hidden treasure offers a delightful respite in the city—a location where history resonates and beauty reveals itself at every corner. In March 2026, we’ll host an unforgettable baking retreat in Scotland. Starting at 100 Princes in Edinburgh, we’ll spend two inspiring days cooking and baking at the New Edinburgh Cooking School, enjoy afternoon tea, and appreciate the exquisite art of tartan weaving with Araminta Campbell. Afterward, we’ll head to the Scottish Highlands for immersive baking sessions and a cozy stay at Ballintaggart’s farmhouse. Discover the picturesque villages and breathtaking landscapes that seem to leap from the pages of Outlander.       A beloved custom throughout Scotland, Sunday roast represents more than just a meal—it’s a weekly gathering full of warmth and comfort. Typically, beef or lamb is served alongside roasted vegetables and potatoes, complemented with rich gravy and fluffy Yorkshire puddings. This meal celebrates slow cooking, seasonal ingredients, and family bonding—where stories are exchanged, plates are shared, and time slows to relish every hearty mouthful. Set under the graceful arches of Palm Court, the experience is presented with signature Scottish elegance—crisp linens, shining silver, and the gentle sounds of a harp. Guests have the choice of over 80 meticulously curated teas, chosen by Palm Court manager Omar Ismail. The exquisite pastries and handcrafted confections are as pleasing to the eye as they are to the palate, each a testament to Ross’s skill and inventiveness. Flaky scones are served with clotted cream and homemade preserves. From the first cup of tea to the last delightful bite, it’s a tribute to enduring tradition with a distinctly modern, luxurious flair.

      For Old Time’s Sake . . . No visit to Scotland is complete without experiencing the evocative sound of bagpipes performing “Auld Lang Syne,” a timeless tune of recollection and camaraderie inspired by Robert Burns’ poetry. Each note carries centuries of tradition, bringing hearts together in celebration while pipers stand tall—their music resonating with the very spirit of Scotland.
