Erin Jeanne McDowell: Baking with Confidence - Bake from Scratch

In Erin Jeanne McDowell's kitchen, precision signifies a loving gesture. Her communication—whether through a screen, a recipe, or the pages of a book—exudes the confidence of a seasoned professional while conveying the warmth of an eternally curious person. "I'm a visual learner," she states. "So, I strive to describe things using as many visual cues as possible. When I can demonstrate through video, it's even better because I can provide both verbal and visual guidance! Sometimes, the most effective way to teach is by offering multiple descriptions of the same concept—this allows you to provide various examples that reinforce instruction, and it increases the likelihood that more people will connect with it."

There’s a generosity in that approach—a conviction that technique is not something to hoard but to share until it finds a place in someone else's hands. This same spirit influenced her earliest experiences. "I grew up baking with my mom and grandma, and those memories continue to inspire my love for baking today," she shares. "One reason I enjoy sharing and teaching is that many people lack that strong connection to food. Perhaps I can serve as a surrogate 'family member' to guide someone in baking from scratch."

This motivation—to create a more welcoming and forgiving kitchen environment—underpins all of Erin's endeavors. Her "fearless baker" philosophy is not centered on achieving perfection but on having the bravery to experiment, fail, and try again. "I loved watching Julia Child with my grandma on PBS," she recalls. "Even when things went wrong, [Julia] always offered encouraging words and a clear way forward. She made cooking feel accessible and enjoyable, and that's a quality I strive for in all my work too! There’s no reason to feel intimidated—it’s all about having fun, relishing the process, and savoring the delicious results!"

That spirit of joyful, confidence-building instruction is already familiar to our readers. Erin has appeared in the pages of Bake from Scratch numerous times and has been a guest instructor at our annual Fall Baking Retreat on two occasions—cherished by participants for her clarity, kindness, and infectious enthusiasm. Her classes fill up fast, reflecting the trust and excitement she generates among bakers who have learned from her both in print and in person.

Erin views pastry as a dialogue among the senses. "I believe it’s important to engage all your senses while baking. It can enhance your understanding and elevate your skills," she explains. "A lot of baking is about muscle memory—and practice leads to perfection! When you engage all your senses, you’re learning to bake more like a professional. You’re not just following instructions blindly; you’re learning to recognize when things look, feel, smell, taste, and even sound just right."
