Cheese and Thyme Cookies - Bake from Scratch

      Classic Cheddar cheese coins receive a sophisticated twist with the addition of extra-sharp Cheddar and rich, buttery Gouda. Each morsel is infused with the earthy, peppery flavor of thyme, elevating your cheese cracker experience.

      Yields approximately 28 cookies.

      - ½ cup (113 grams) cold unsalted butter, diced

      - ½ cup (57 grams) shredded Gouda cheese

      - ½ cup (57 grams) shredded extra-sharp white Cheddar cheese

      - 1 tablespoon (2 grams) fresh thyme leaves

      - ½ teaspoon (1.5 grams) kosher salt

      - ¼ teaspoon dry mustard

      - ⅛ teaspoon smoked paprika

      - ⅛ teaspoon ground black pepper

      - 1½ cups (188 grams) all-purpose flour

      Preheat the oven to 325°F (170°C) and line two baking sheets with parchment paper.

      In the bowl of a food processor, combine cold butter, cheeses, thyme, salt, dry mustard, paprika, and pepper; pulse the mixture until small clumps start to form. Add the flour and pulse until it is mixed and larger clumps appear. (Alternatively, in a large bowl, use a pastry cutter to blend the cold butter until it resembles small peas. Add the cheeses, thyme, salt, dry mustard, paprika, and pepper. Continue cutting until small clumps form, then incorporate the flour until larger clumps develop. Knead the mixture by hand in the bowl or on a surface until the dough comes together.)

      Transfer the dough to a clean surface and knead it until cohesive. On a lightly floured surface, roll out the dough to a thickness of ¼ inch. Use a 1¾-inch round cutter dusted with flour to cut out circles from the dough, re-rolling scraps as necessary, and arrange them on the prepared baking sheets. Cover and chill in the refrigerator until firm, about 1 hour. (Alternatively, freeze for 15 to 20 minutes.)

      Once chilled, place the dough portions at least 1 inch apart on the baking sheets. Bake until the bottoms turn a light golden brown, approximately 14 to 16 minutes. Allow them to cool on the sheets for 5 minutes before transferring to wire racks to cool completely.
